Another reddit discussion suggested that Nikki may not like the majority of the cast and that's why she's not on the show right now. But a fan commented that Nikki gets along with the cast. According to the same fan and redditor, however, Nikki is often criticized by viewers.

Nikki and Angelia aren't exactly besties on 'Jersey Shore.'Because Nikki has continuously appeared on Jersey Shore: Family Vacation since her relationship with Pauly became serious, it is a shock that she would suddenly choose to no longer film with the rest of the cast. Her sudden absence could in part be due to her massive fight with Angelina Pivarnick during Jersey Shore: Family Vacation season 5. While the group was in San Diego, Nikki and Angelina got into a screaming match after Angelina poured wine on Nikki. Angelina was bickering with Vinny Guadagnino, when water began being poured on people. Water quickly turned to wine when Angelina left and returned with a glass of red wine, which ultimately ended up all over Nikki. Nikki, Angelina, and even Pauly got into a screaming match involving even more wine.
Although Nikki and Angelina eventually worked out their issues, this blowup could have something to do with Nikki potentially no longer filming for the show. While her departure has not been confirmed, it is assumed that she will not be in any of the major scenes in the coming episodes of Jersey Shore: Family Vacation. Hopefully, Nikki will at least make a brief appearance in an episode or two later in the season.
